Roots are up! Some of the most satisfying crops to harvest are those that grow underground. Farmers just have to trust that those beets, carrots, and potatoes, seeded in the spring, have been doing amazing things under the surface of the soil. For so many of the local vegetable farmers, that is indeed the case. All the vegetable vendors at the Truro market this week have at least one root veg, and most have more than one. Blue, white, and red potatoes still dirty from digging are piled high. Carrots and beets come bunched with tops. Don’t let those green leaves go to waste: use beet greens as you would chard and try carrot tops in pesto. —Antonia DaSilva
