The first carrots and beets of the season have made an appearance, but it’s the garlic scapes that are really having their moment. For a short time, farmers delight in the mild green curlicue that each garlic plant sends up in June. Stephanie Rein of Truro’s Out There Organics likes to use scapes in pesto and risotto or grill them to munch on as a side dish. Ruby Corrigan of Corrigan Family Farms in Brewster likes to preserve some of her harvest for the winter: “Just blend the scapes with olive oil in a food processor and freeze the mixture in ice cube trays.”
